Mommy Cooks Corner-Turkey Meatball Surprise!


With picky kids and appetites we want healthy and tasty meals for them. My friend Chrissy has an amazing “Turkey meatball surprise,” she prepares and the kids love it. Hope you love it too!

1 pound of turkey meat 97% fat free
1 red pepper minced
1 yellow onion minced
3 cloves minced garlic
2 eggs
1/2 cup Italian seasoned breadcrumbs (or more if too moist)
1 slice wheat bread
1 tablespoon grated cheese
1 teaspoon Italian seasoning
1/2 teaspoon parsley
1/4 teaspoon poultry seasoning
1/2 bag birds eye frozen mixed vegetables
Dash salt
Dash pepper

1 or 2 tablespoons of olive oil for frying

First, cook half the bag of frozen veggies then purée with blender or food processor. This will be "hidden" in the meatball mixture so make sure it's thin!
In a big bowl add turkey meat,minced peppers,onion and garlic. Add all spices and grated cheese, eggs and breadcrumbs
Take one slice of wheat bread and wet it under water, squeeze some water out, it should be wet but not soaked. Break up the wet bread into the meatball mix.

Add veggie purée and all remaining ingredients.
Blend mixture thoroughly with hands. It should bind together well, then form into balls. If not, add more breadcrumb until mix forms soft balls.
Create meatballs as large or small as you like. These freeze beautifully so I make 1" balls
heat oil in a heavy pan, add meatballs turning frequently so they don't stick or burn
Try not to overload the pan or the meatballs may stick to each other or fall apart.
I freeze these in ziplock bags and use as needed. My tip is to use a large zip lock bag and freeze in one layer, If you throw them in they will freeze Into one big ball.


Don't tell your kids these are veggie meatballs, they will never know!!! :)
